I have submitted a single EOI for subclasses 189, 190, and 491. However, we do not intend to pursue the 491 visa even if we receive an invitation for it [I have 95 points as mechanical engineer & 2 more years on my SC485, So 491 is my last priority]. My question is: if we get an invitation for 491 and choose not to accept it, what impact will that have on my EOIs for 189 and 190

if you don't want 491 then why bother putting EOI and complicate matters. Simply withdraw it so that someone who is keen on getting it will have the chance.

Usually the same state that issues invite for 491 won't issue one for 190, it's either or. You can still get 189 invite though. If you have 95 points for 189 visa, you're in a really great situation and should be selected in the next round. that's 100 points for 190 which is also amazing or 110 for 491, which is terrific. If I were you, I'd focus on 190 and 189 only at this point and make my 491 EOI inactive.
