I will complete my 52nd week for schedule 1 work experience requirement . But I will get my payslip next week after cmpletion of 53rd week. Shall I update my EOI this weekend or wait until payslip comes?

Since the work experience is already completed, you can update as per the dates. Even if the proof (payslip) comes in coming weeks.
